Our Story…
We were city folk through and through, always rushing, working, juggling. It felt like time was passing and we were missing something… hard to name but impossible to ignore.
And then, somehow, a house on a tiny island found us. The pull was irresistible, we began to imagine a different kind of life. Could we really slow things down, be part of a new community, bring a different dream to life…
We’ve always loved whole grains, sourdough, warm muffins and buns fresh from the oven. So when we finally chose to leave the noise behind and embrace a fresh adventure, it seemed natural that an artisanal, family-run bakery would be the right fit. We packed up our crew of five (plus one indifferent cat and a mighty sourdough starter) and traded the sirens and smog of the city for sea breezes and the steady rhythm of baking.
At The Hidden Loaf, the process matters as much as the result. Our bread, like us, takes its time. We use local flours and long fermentation, we shape everything by hand and bake in small quantities. This patient, deliberate process is what makes bread that nourishes, anchors a meal, and connects us across generations and cultures.
We’re Danny and Karina, and our mission is to celebrate simple, honest ingredients, and give whole grains and sourdough the spotlight they deserve.
The Daily Bake
All our breads begin with a spoonful of sourdough starter for flavour, texture, and balance, before we blend in a variety of beautiful flours. Among others, we use buckwheat (because it’s rich in magnesium), quinoa (because it contains all essential amino acids), and golden kamut (because it’s naturally high in protein and selenium). We love grains with character: nutty, earthy, sweet, sturdy, never quite the same twice.
The result is bread with depth, warmth, and substance… loaves that keep well and feel right at home beside a bowl of soup or under a swipe of good butter and honey.
We are always amazed by the way everything we bake has its own personality!

Rustic Sourdough
Our sourdough is the cheeky one of the family, with a tangy crumb and a crackling crust made for tearing, dipping, and lingering over. The living culture that gives our 100% sourdough its flavour has a quality life with forest walks, ocean breezes, and long naps on the bakery shelf. You can taste a little of that vibrance in every bite.
Whole Grain Loaf
Each week, a different grain takes the stage, bringing new flavours and textures to the table. Some loaves are floral, some malty, some mellow, but all are made to be buttered up and loved. This wandering loaf will be expressive and eccentric, familiar enough to feel comforting, different enough to surprise you.
Classic Brown Bread
This is the loaf that doesn’t rush to speak. Made with toasted oats and a touch of molasses, it’s an iron-rich, wholesome bread with a soft sweetness. Built for real life: breakfast slices, packed lunches, or a snack at the end of the day.
The Almost White
The Almost White is soft, light, and approachable. It behaves like a straightforward white loaf, but beneath the surface whole grains are subtly adding richness, without changing its easygoing nature.
The Hidden Loaf Bun
After being asked every morning by our kids if there were any buns for breakfast, we finally decided we would just start making them every day… so we can happily answer “Yes!”. Our uncomplicated buns are full of cinnamon, cardamom, and lime. Truly timeless… and sometimes a lifesaver.
Muffin of the Moment
A different muffin appears regularly from our ovens, inspired by the seasons and what arrives in the kitchen. Our muffins are substantial and inviting, baked in small batches and meant for that day’s table.
Jam Brioche
Our Jam Brioche sits somewhere between breakfast and dessert. Inspired by the Scandinavian solbulle, it is a tender brioche topped with fruit jam and custard, and baked until golden at the edges. Perfect for coffee breaks that stretch a little longer.
Chocolate Pecan Cookie
This is the show-off of the family. A lavish cookie, unapologetically loaded with chocolate and nuts, with a soft, chewy centre that it knows is irresistible. A whisper of golden caramel adds just enough drama. It never stays on the tray for long, as it simply refuses to be ignored.
